I finally was able to get some more Shochu in and have waited patiently while it infused with jasmine green tea. I've tasted, I've tested and I've finally come to the final version of my new Tea Cooler. Infused Shochu layered with crisp English cucumbers with just enough sweet and bitter to be cool and refreshing.
Remember it's just tea you can drink it rain or shine. ;-)
Chef has decided to change the date of our next wine dinner (May 17th) to June 1st. Our first Friday event! With Urban Eats this month we just can't justify setting the day aside at this time. So we've pushed it back a little. Same great food, wine and friends of course.

Two brown boxes found their way to our front door today, thanks to the man in brown (where was Paul today?). Inside each box packed loving lovely with a Styrofoam inner core, shredded cardboard and frozen gel packs, to keep it at the perfect temperature, was my newest cheese find.
Hailing from Logdsen, OR on the Oregon Central Coast north of Newport and just west of Salem. Rivers Edge Chevre is just one of my many recent west coast finds. Small producers who don't use distributors and producing on this coast is my goal for the summer. I've gathered up quite the list of them that I feel are up to the quality levels I expect from the greatest cheese makers around the globe.
Here's what I found in the box... Saint Olga, Illahee Tomme, Up in Smoke and Full Moon. Pat also sent me some great samples. One for sure I'll be including in the next order, Humbug Mountain. The name caught my eye and I almost included it this time, but I try not to over do it too much on new products ;-). The rich flavor and creamy texture with the addition of just a hint of ash make for a great cheese worthy of anyones cheese plate.

Fresh French Wine Dinner Menu

Originally inspired by the Pyrenees-style sheep cheese. It has it’s own
British typicality. The outer crust is marked from the basket mould used to
form the wheels. The dense creamy paste has hints of nuts and citrus with
mild fruity tones. Great all alone or as a cooking cheese.

Patterned after an aged Dutch Gouda and named for a town near the farm, it resembles Boerenkaas and Saenkanter, However, a little creamier and not quite as candy-sweet as the Dutch cheeses can be. Originally made by Helene and Dick Willems who left Holland more than 20 years ago. The Willems' son, Dickie has taken on the task now using milk purchased from neighboring farms. The rich creamy flavor has just a hint of lemon on the finish.

Appleby’s
Considered to be the oldest British cheese. It is mentioned in the Doomsday book (1086) and probably dates back to Roman times. Genuine Cheshire is said to be made with the milk from cattle grazed on the salty pastures of the Cheshire plain in Cheshire, Shropshire and Clywd. Although Cheshire is naturally a light golden color, it is more often dyed to a rich orange using
annatto. Legend has it that because its reputation was so good, some Welsh farmers labeled their own cheese as Cheshire and sold it to coach travelers on the Hollyhead to London route. The Londoners were unhappy when they tasted the inferior cheese back at home and thus the name of Cheshire cheese began to fall into disrepute. The Welsh farmers were told to dye their cheese in order to distinguish it from real Cheshire. However, the new colored cheese quickly became fashionable and the Cheshire makers soon found themselves having to follow suit. Thus, red Cheshire was born.
