Wear your favorite comfortable clothes, and be yourself; as we will.
Have you ever wanted to step from behind the curtains and
say "Ta Da!" Go ahead if it makes you feel good.
We never take life too seriously and look for the fun in everything we do.
Be careful though, long term exposure can be contagious.
If you tell us your food is acceptable we will believe you.
We will always be honest with you.
At the same time we ask the same of you.
Don't like a dish? Let us know, right then.
Not after you clean the plate.
We understand that just like us, you are someone who wants the best.
There is little that can be done to fix your meal when it is written on a comment card or posted online days later.
Just because the 100 people before you loved it, does not mean you have to.
Sometimes a 'bad egg' can slip through. Please let us fix it.
As a guest we can not control what each of you can say or do.
With a grin, scoldings will be handed out as needed.
We try our hardest to find an alternative to no, but keep it in reserve for those that need it.
Don't worry, if you are out of line we will let you know.

You will not find a large multi-page menu with ingredients stored in deep freeze for months.
Fresh, Wild, Natural, Free Range and Organic are our standards.
We seek only the best quality ingredients from the most reliable sources.
You will never see a large freight truck unloading 100s of ready to serve meals outside our door.
Each preparation on the single page fresh sheet is unique.
Created just for that dish.
Each component is important and intended to be served together.
If you have specific dietary needs let your server know.
Extensive needs? Write a list that the kitchen can create a custom dish around.
Please don't ask them to make your food boring though. They may cry.

Each bottle on our menu has been tasted and chosen by Chef and guaranteed to be great.
Why would she want to buy bad wine, let alone drink it?
The wines by the glass are of the same caliber as our bottle list.
Food friendly and enjoyable. Not just wine to guzzle.
We have a large offering of
generously poured top quality wine.
The cheese selection features only the best and is picked by the in house cheese steward.
Yes, of course, every one is his favorite.
Do you like magic?
Just as a good magician rarely shares their secrets,
Chef is less than likely to share hers.
Many dishes on the menu are one time creations with little
thought put into turning them into over-used recipes.
You may ask, but she'll most likely turn you down with a laugh.
Each experience should be unique and leave
you wondering what "secret" ingredient made it work so well.
Probably love, desire and a true commitment to each dish she presents.
Quality and Value.
We could bring in lower quality prepacked products from questionable origins with a higher profit margin
but that is not why we do this. We started this restaurant because it is what we enjoy
doing and couldn't see doing anything else. We'll continue to source quality ingredients from reliable
local sources no matter the economics. Of course we have to charge an appropriate price so we can be here the next time
you want to come in for
a happy hour snack, an outstanding bottle of wine, or your next dinner out.
We'll leave the profit taking to the bank execs.
Ingredients and Prepartion.
Do you prefer your food prepared to show its best?
The kitchen serves each dish at its proper temperature to
bring out the flavor and texture that they want you to enjoy.
Salmon is wet, Scallops seared "pert near raw"
(As Alton Brown says on a great Good Eats episode - Shell Game IV)
Vegies are often severed crisp and maintain
much of their nutrients.
Many of our proteins are dry-aged giving them
a chance to come to their full potential.
Steaks are tender and juicy
(when not well done, but done well)
and pork can even be a little pink.
You may also find the chicken we serve to have a healthy cardiovascular system.
This is due to their free range nature and generally not what some consider undercooked.
All of our dishes are served at an edible temperature. If you are looking for
something extra hot let your server know before it is prepared as we do
not have a microwave to over heat food to blistering levels.
Did you hear? Fat is good!
The kitchen seeks the best cuts marbled and capped with fat.
The
salmon is served with the omega3 rich skin.
It is, afterall,
what adds that wonderful flavor.
And how can you say no to all natural?
Hopefully your mother said it first. "Never season your food before you try it" - it's our motto as well.
You will not find instruments to over season
your food available on the table
nor will
your
server offer any.
Don't worry... the kitchen has already taken care of it for you, as it should be.

We do too. Share plates appear as needed.
The kitchen serves dishes as they intend them to appear.

Chef offers her creations by the cup.

After you dine do you like to stack your plates?
Please let us, as it is our job to take care of you.
No one wants you to feel rushed.
We will wait for everyone to finish, especially the ladies, before we whisk away your empty entree plates.
In a hurry. Just let us know.

Do you love dense, rich, forget the diet desserts?
Excellent, that's what Chef does!
No three tiered, soft and cuddly pleasure palaces here.
Just simple, but don't let that word fool you, Tarts.
But are they really tarts?
Yes they all come in pie shape.
We experimented with dinosaurs, moons, stars and four leaf clovers, but it just didn't work out.
Each days creations can vary and you never know if or when she'll recreate that last masterpiece.
Sorry these are not available whole.
We'd be happy to point you towards some great local bakeries.
Attentive & Knowledgable Staff.
How much staff is too much?
We are in the firm belief less is more.
Your server should be just that; Yours.
Runner? Drinks? Assistant? Order Taker? Who's taking care of me?
They don't use scripts. They are never fake happy or pretend smiley.
There are already too many places like that.
You will not find staff who are expected to explain every minute
detail of your dish down to where the dirt the plates where made from originated.
If you ask, they'll know many of the details or know where to find out if needed.
Food is ment to be eaten and enjoyed. Not detailed like a science experiment.
We have a small team of dedicated, honest individuals who work hard and even
will come in on their days off in a pinch to make sure you have the best experience.
Can you color?
We haven't even forgotten the inner child. You will find crayons and paper (recycled newsprint, of course) on every table.
No, these are not for the kids, but the well behaved are welcome to join in.

Like all great artwork however, some can get lost in the shuffle.
Unlike many eateries we want you focus on what we put before you.
Our cozy, often romantic, space is its own environment. Free of the distractions of the world outside.
We don't use a flashy website site or ads to deceive you into believing what we are not.
We have long believed in keeping things simple and easy to use.
Even if you disable scripting or use a mobile browser you'll notice our website still functions.
You can even copy this very text and have access to all of our logos and images easily.
Nothing is blocked or hidden within a flash document.
We are your family for the many pleasures of food and drink.
